Much like Champagne from Champagne, France, tequila must be grown and made within designated areas of the country of Mexico. It is basically the ecosystem where the Agave Tequilana (aka Blue Weber Agave) grow. All of the state of Jalisco, and some small areas in the states of Nayarit, Michoacán, Tamaulipas and Guanajuato comprise the designated areas. These rules are tightly followed and any tequila product produced outside of these official zones are not allowed to be called tequila. Within these zones are Highland agaves, grown on the mountain-sides and Lowland agaves, grown in the valleys. Canción Tequila is grown in the valleys with Lowland agaves that grow in soil with heavy obsidian in the terroir giving our un-oaked Blanco a lovely peppery hue. Our distillery, located in the town of Tequila in the state of Jalisco, uses the clean water runoff from under the dormant volcano nearby known as Tequila Volcan. ¡Salud!
