Our Secret Ingredient – Volcano Water!
Tequila Volcano (Volcán de Tequila) is located at the southern end of the famed town of Tequila, Jalisco, towering above the landscape of agave fields. Curiously, we may never have heard of Tequila the town if it weren’t for Tequila the volcano. Up until its last eruption 200,000 years ago, this classic stratovolcano produced vast quantities of lava, including enough obsidian to rank the state of Jalisco fourth largest in the world in terms of obsidian deposits. Even on the hottest day you will need a jacket at the very top, which is about 10,000 feet above sea level.
The ash released by the volcano covered a large area where, combined with abundant sunshine and near-tropical climates in the already fertile canyons, helped produce the perfect environment for growing blue weber agave whose juice is distilled to produce tequila. The volcano also has numerous cold springs from which clear, pure water bubbles year round. It is this water that is pumped from the volcano to our distillery and is used for our tequila batches in the last manufacturing step before bottling to bring each batch to exactly 80 proof – which is the standard by Mexican law.
